Chocolate!

At the nearby mall there is a Haagen Dazs ice cream parlor that serves up a decadent chocolate fondue!  We had ice cream balls, cookies, brownies and waffle cones to dip.  Unfortunately they were plum out of fruit, but we received a 20% discount so that was okay :-)

Need I say any more?!?!

Tennis Pros

The boys took lessons twice from a tennis pro here at the resort.  They also played a few times in the interim, and are excited to go back home with some new skills to practice!

Snorkling

Ryan, Bethany Jean and Darrell and I went for a snorkling trip yesterday.  You ride jet ski boats through the lagoon jungle and out into the ocean for some awesome snorkling.

The reef we snorkled on is the northernmost tip of the incredible reef that runs the length of Belize.  It is a popular destination for scuba divers.  Since there were only 4 of us, our guide took us on a specialized swim outside of the normal snorkel area, and it was really awesome!  We saw many incredible fish, coral, etc, but the greatest thing we were able to find were 2 large stingrays!

Dinner Show

Wednesday evening we enjoyed a Mexican/Seafood Buffet with a Caribbean dinner show at the Hacienda Sisal.

Afterwards the old farts went back to the room while the younger set went to the Sports Bar for some karaoke.

Sailing

Darrell and Ryan took free sailing lessons earlier this week through the resort.  Today Darrell took a spin with the wind of 25 knots........

Oops!  Flipped over.......

He remembered from the lesson how to right the boat and get back in.

However, he needed rescuing.....

He could not navigate the strong winds....

Safely back at the dock!

Little Mexican Cooking School

Tuesday the six of us took a taxi to Puerto Morelos and joined an authentic Mexican Cooking class in a quaint little kitchen with Claudia as the chef-teacher.  She is from Mexico City, though has travelled around to many parts of Mexico.  She was funny and a terrific chef!  There were 12 of us altogther, and she made time for everyone to ask questions and participate.  She taught us much about the different kinds of peppers.  Apparently there are over a million different varieties!

Some exotic fruit eaten with a bit of shaved sugar cane...... YUM!                               Hibiscus flower tea.

Salsa making

We sampled several tequilas ..........  were a bit light-headed!

Making tortilla and sopes

Sopes

Clay pots are seasoned and used for cooking beans

There was a lovely eating pool right outside the kitchen!

Sangria.......... they like their alcohol in Mexico!

Time to sit and eat the meal.....

Soup made from the mushrooms that grow on corn crops, with zucchini and other wonderful ingredients, topped with tortilla strips.  Very savory!

Chicken and bean side dish

All the supper dishes, including poblano chilis

Orchata (a rice milk, sweet and refreshing)

Dessert:  pecan brownie with creme fraiche and a fruit sauce

The day was a fun diversion from our normal times in Mexico, spent with a great group of folks (12 students), and the food was terrific!
