Christmas

Bethany Jean called from Guatemala to be a part of our family Christmas on Dec 23rd.


We had our traditional Christmas Eve White Bean Chicken Chili that evening.


Homemade cranberry drink made from fresh cranberries, with ginger ale.


Christmas Day with Ryan, we breakfasted on eggs, sausage and a cardamom wreathe.  Dinner included a ham and sweet potatoes cooked in the crock pot in ginger ale, served with a blackberry sauce made with my Blackberry Pie Jam.  Also, sunshine carrots with fresh carrots from this summer's garden.


The Cardamom Wreathe, filled with almonds and golden raisins in a sugar-cinnamon mix.  It was most delicious :o}

Soggy

I see on the news that California is having some unusually wet weather, causing flooding and quite a mess.  Last week we had our turn with a deluge of rain, and subsequent flooding.  Here are a couple of photos I snapped while driving on the valley floor (far more dangerous than talking on a cell phone I think, but not illegal yet!).



No, this is not a big lake, but normally  fertile farming grounds and pastures.  Happens once or twice every year.

I was thankful to return to my high and dry home that afternoon :-}

Beer Dough

Darrell likes to make pizza using a dough recipe that uses beer. This weekend he made a garlic chicken pizza and used beer made from our own hops for the dough.  It was very tasty!  We gave our hops to a gal from Darrell's work (and her husband), and they made a variety of beers using them.  I love it when someone can use what I grow and don't do anything with.

Photo Collages

A friend has inspired me by her example, to make the effort to learn more of what my PhotoShop Elements can do.  Last week I played around with making a couple of photo collages with it, as well as a scrapbook page. 




I am sure someone could get very creative with this stuff!  PSE is a pretty neat program, though, if anyone is looking for a photo editing software :o}  I received mine for Christmas 2 years ago, took 2 on-line courses on the basic functions plus a bit of  fun, and promptly forgot much of it.  Oh dear........

Italian Zucchini Pie

How did your vegetable garden do this past summer?  I planted 3 times.  The early May snow killed off my first planting of seedlings I had started indoors in March.  The heavy, cold late May rains drowned the seeds of my second planting.  The June planting took a while to come up, and with the cooler summer this year, what managed to come to fruition did so in September and October!  Thus, I just used my last zucchini for dinner last night:

This is one of our favorite ways to use the summer squash.  Sauté 4 cups sliced zucchini with 1/2 cup chopped onion and a clove or 3 of garlic in 1/4 cup butter or margarine.   Stir in 1/2 cup minced parsley, a few basil leaves, chiffonaded, a handful of oregano leaves along with 1/2 teaspoon each, salt and pepper.

Remove from heat and mix in 4 beaten eggs and about 2 cups cheese of your choice.  Mozzarella, Monterrey Jack or Cheddar all work great.

Pour into a prepared pie shell and bake at 375 degrees for approximately 30 minutes, or until set.  The recipe calls for 2 teaspoons of Dijon mustard to be spread on the bottom of the pie crust before you fill it, and though it adds a nice touch, I prefer it without the mustard.  I serve it on the side instead, and Darrell simply spreads it on the top of the finished pie.  Once out of the oven, garnish the top with fresh tomato slices, and serve with muffins and applesauce if desired.

Christmas Memory: Remember Woolworth's?

A friend sent me this old menu from Woolworth's, and boy did it ever bring some memories flooding back!  Founded in 1879 by Frank W. Woolworth, it was one of the original and largest five-and-dime stores in America until the 1980's, when increased competition led to its decline.  Ever wonder what became of the chain?  In the late 1990's it became the Foot Locker, Inc! 

Growing up, there was a Woolworth's five-and-dime in a nearby town. I have wonderful memories of my mother taking the 3 of us children to the store the week before Christmas to hunt out those special gifts for each other.  We shopped little in our family, so it was something to get excited about.  Upstairs the shelves were lined with clothing, household items and other goods that might interest an adult.  However, it was the basement that beckoned to us kids, for it was filled with toys, games, recreational equipment, bicycles and anything else that might capture the attention and imagination of a child.  And it did!  At least mine.  I can still see in my mind's eye one year when I spied a miniature play set of Snow White and the Seven Dwarfs, complete with a tiny table to set in the kitchen that was drawn on the box's background.  The bottom of the box had a wooden floor painted on it.  I loved this set!  No, more than that. I coveted it!  I so hoped that it would be under the Christmas tree for me the following week.  I continued on up and down the isles until I had selected the perfect gifts for my sister and brother, though I have no memory of what they were.  My mind was too filled with visions of the treasure I'd found and longed for.  After we had chosen and purchased our gifts, my mother took us back upstairs and treated us to a rare occurrence........  a meal out at Woolworth's fountain and lunch counter!  It was here that I was introduced to the Bacon and Tomato Sandwich, something that would become a life-long favorite of mine.    Mom also splurged and allowed us to order milkshakes.  What a treat!   Ah, but those were the days...........

Yes, I did receive my beloved Snow White and her Dwarfs, a gift from my brother, I believe.  And though I have long since lost the pretty box they came in, as well as the tiny table, I hung onto that set for years. I  still have the Seven Dwarfs to this day!  I remember agonizing over getting rid of Snow White as an adult (a silly notion of 'cleaning out' hit me), and decided in favor of her disposal.  Crazy! Don't ask me to understand my thought process at the time. I could still have the original complete set!

Early Gifts


Zeke and Scout enjoyed early Christmas gifts yesterday :o}  Scout received the outer part of a doggie bed to snuggle into on these cold, cold days and nights, while Zeke enjoys the inner cushion for his pillow.  Besides the little stuffed animal that Zeke arrived with, he has never shown any interest in other toys, such as  Scout's balls.  However, they both are rambunctiously enjoying these new toys and others that came in a boxed package from Costco!  Merry Christmas, Boys!

Zwilight Zone

I snapped this macro photo earlier this fall from the top of a post that holds our garden's water spigot.  Barely noticeable, these little fungi caught my attention after looking at a photographic book from the library that had pictures of other fungi that they had done fun things with.  There is also some moss and a few pine needles, none of which I placed there.

Carrot-Potato soup, made from an abundance of dark orange carrots from this year's garden

Mexican Stew, a delicious dish with tender pork meat and fresh carrots, among other things.

Simple, yet Tasty!


So simple to make, these appetizers are sure to please your guests!  Take a baguette loaf, cut it into slices about 1/4 " or a bit larger and spread garlic butter on one side of each slice.  With buttered side to the pan, top with a tomato slice and provolone cheese.  Top with another slice of the bread (buttered side up) and a sprig of rosemary.  Bake in a 400 degree oven for 4-5 minutes and then enjoy :o}

Berry Pie Jam


I spent a day this fall with a canning friend who takes all 1st places in the State Fair on a large variety of jams, jellies, and other canned goods!  She taught me how to make pepper jelly that actually sets, so next year watch out!  You just might get some for Christmas!  While there, we sampled quite a few of her different jams and jellies.  One of my favorites was her very own Blackberry Pie Jam, of which she shared with me her secret ingredient.  I came home and the next day picked more blackberries and raspberries and made a Mixed Berry Pie Jam, which is pictured above.  YUM!  is all I can say :o}

Happy Birthday Girl!

I was able to celebrate Bethany's 24th birthday with her in Guatemala, the first time since she was 17 years old!

Two other Peace Corps Volunteers live in her town, Carolyn and Derc.  Carolyn made a fabulous lasagna dinner for us all, and we ate, drank and played several games that evening!

She had 2 cakes, one at our dinner, and then when we returned to her room, Fátima's family had cake and hot cocoa for us!  Such a nice birthday :o}

This finally ends my blogging on Guatemala, and gives me a record of my trip. Thanks to anyone who might have suffered through all of this with me :o}
